The history of La Paloma dates back to 1938, when it first opened its doors after moving to Apuntadores Street from the Muelle Viejo (Old Dock) due to the Civil War. Its history has been marked by different stages and owners who have left their mark on this iconic establishment.

In 1943, the La Paloma inn was already featured prominently in the Commercial Tourist Guide to Mallorca. Versified (Palma, 1943), mentioned on pages 213 and 325.
During this time, the inn was run by owners Jaime Mulet Alemany and Catalina Castell Simó.
From 1945 to 1953, the business was run by Jaime Mulet Alemany and Catalina Castell Simó. In 1948, Miguel Llabrés Fiol and his wife, Catalina Mulet Pujol, took over the restaurant, which at the time was a popular meeting place for soldiers and dock workers. One of the most popular dishes of the time was "carne con patata," a humble post-war recipe consisting of small pieces of beef sautéed in a large saucepan with a little broth.

Between 1955 and 1968, Miguel Llabrés and Catalina Mulet returned to manage La Paloma, consolidating it as one of the neighborhood's most popular inns. Around 1968, Miguel Llabrés handed the inn over to brothers Jaime and Sebastián Buades, who continued his legacy.
